I got pregnant through IVF and my IVF doctor calculated the Expected Delivery Date (EDD) one week different to the one my obstetrician and ultrasound results states. Who is right?

If you've had IVF, you IVF doctor will know exactly when fertilization took place, and when implanatation of the embryo is likely to have occurred. It is this EDD from IVF, rather than the scan EDD, which is likely to be the correct one-scans are only accurate to within a few days anyway.
