Wearing waterproof gloves whilst changing the litter will give protection against toxolasma (the parasite that can be passed to you from cat litter) and some bacterial infections. You could also have a blood test to check if you are immune to toxoplasma, If you're immune, you are highly unlikely to get the disease again.
